I originally called this post sabotaged, but then I changed it. My menu has been a hilarious disaster since I blogged about it last week. Here’s why.
Monday was a bust because I didn’t realize the tempeh had to be marinated and we were out of sauerkraut, so we just had the leftover lentil soup, sourdough bread, and salad. The tempeh idea got rolled over into this week & will hopefully happen today and be delicious. Incidentally, I’ve never made tempeh, eaten tempeh, or wanted to. It definitely looks … interesting. But since a special someone became vegetarian I am trying to explore new sources of plant protein. Don’t be afraid to try new things. That’s what I keep telling myself!
On Tuesday the zucchini was so bitter I gave it to our backyard chickens & made green beans instead. Then I realized too late the heavy cream (I recently opened!) was clumpy and rotten so I had to start the sauce all over again with milk & no time to spare. While that was happening I burned the rice on the bottom. Oh bother. We still enjoyed our meal and I would definitely make marry me chickpeas again. No one proposed to me all over again though.
Wednesday’s dessert date turned into going out for burgers and fries. #noregrets
I forgot I had planned buckwheat cakes for Thursday (they have to be mixed in advance and left to sit) so we used a birthday coupon and went out for hibachi. #onionvolcano
Friday was leftovers, Saturday we cooked an Italian dinner together, and Sunday was a church potluck. I love how random they are. I brought pumpkin ravioli with pesto to share.
I guess you could say nothing went as planned. We spent more money than I wanted. And we didn’t eat nearly as healthy as I’d hoped. But that doesn’t mean I’m going to give up. No, no, no. We still ate together, talked, and laughed at the table. I mean belly laughed. And making a plan brings me joy.
This week Florida is bracing for another named hurricane. So as much as I want to say here’s to a new and hopefully smoother week, it might be peanut butter sandwiches, canned tuna, and granola bars in the dark. That is okay. God is always good and we will still give thanks. While I am in and out of the kitchen, I will be praying for God’s protection, peace, and neighborly love. xoxo
Monday: tempeh reuben sandwiches (take two), kale salad
Tuesday: taco Tuesday w/homemade guacamole
Wednesday: spaghetti squash, bolognese, mushrooms, caesar salad
Thursday: buckwheat cakes & sausage, scrambled eggs, fruit
Friday: pizza then a movie at a friend’s house 🙂
Saturday: grilled steak and veggies at my moms house
