Better late than never! The temperatures are starting to cool down here a little, so it is time to get cozy in the kitchen and prepare some warm, nourishing meals and soups galore! Like Maurice said, we really enjoy a cold front after the many, hot summer months. I’m hoping for some evening bonfires after dinner this week too. Eat well!
Monday: butternut squash soup, harvest salad w/blackened salmon
Tuesday: veggie enchiladas
Wednesday: shepherd’s pie topped with mashed cauliflower (vegetarian version with mushrooms)
Thursday: breakfast for dinner
Friday: broccoli soup, black bean burgers
Saturday: chili, roasted sweet potatoes
