This week M has a cold and my husband is scheduled for a routine colonoscopy Friday morning. This makes menu planning more necessary, in my opinion. Since there are spiritual and physical health benefits to fasting, M and I are going to join with a juice fast on Thurs. This week I’m looking forward to spending more time outside than in the kitchen.
Monday: homemade ramen w/hard boiled eggs
Tuesday: fish tacos w/slaw, rice and beans, guacamole
Wednesday: everybody’s darling tofu, roasted vegetables, mashed potatoes
Thursday: clear liquid diet featuring green juice (celery, granny smith apples, kale, cucumbers, lime)
Friday: buckwheat cakes, sausage, scrambled eggs, applesauce
Saturday: stuffed grape leaves, roasted cauliflower, tabouleh
