Better late than never. Today is my mom’s birthday and my sister is visiting during the week, so this plan might get a little topsy turvy. That is always more than okay with me. I still like to keep my weekly rhythm of planning meals that can carry over to some other time, if necessary. I’m seriously considering making vegetarian only dinners for a few months and seem to be well on my way. Happy planning and eating and visiting!
Monday: zucchini lasagna, caesar salad
Tuesday: taco bar
Wednesday: leftover zucchini lasagna, spinach artichoke dip
Thursday: butternut squash soup, roasted vegetable quiche
Friday: falafel, hummus and pita, pickled vegetables
Saturday: vegetable soup, deluxe grilled cheese on homemade sourdough
Sunday: eggplant parmesan (monthly potluck at church)
