It’s a big week in our family! My niece (who is like a daughter to me) is getting married Saturday to the love of her life. I can’t wait to see her walk down the aisle, witness their exchange of vows, catch up with family and friends under the stars, and eat all the delicious food!

As I was cooking tonight, I ran through this quick plan in my head. Sometimes you gotta think on your feet.

Monday: teriyaki tofu, vegetable fried rice, ginger broccoli, vegetable spring rolls

Tuesday: butternut squash and black bean tacos

Wednesday: meatloaf, stuffed mushrooms, mashed potatoes, green beans

Thursday: leftovers

Friday: rehearsal dinner!!!!!!!!

Saturday: the wedding!!!!!!!!!!!!!!!!!!!!!!!!
