As you may have noticed, I did not post a weekly menu last week. That is because I did not make one. I figured since we had so many thanksgiving leftovers, it wasn’t necessary to write out a plan. I was so wrong! We ended up eating out way too much because I was unprepared and unorganized. And now I need to clean out the fridge! It’s hard to think about dinner when there’s so much else to think about. All that to say, it’s good to be back. If there’s ever a recipe you would like me to share, don’t hesitate to ask.
Monday: grilled mahi, roasted vegetables, green goddess salad
Tuesday: almost always tacos (details still swirling in my head)
Wednesday: zucchini lasagna, caesar salad
Thursday: dinner with my mom
Friday: buckwheat cakes, sausage, scrambled eggs, fruit salad
Saturday: stuffed peppers, tabouleh, hummus & pita
