weekly menu week 3

Well, I’m just now catching my breath from spending the long weekend in NC with an amazing group of teens, worshiping the Lord of all creation morning, noon, and night. The camp staff prepared thoughtful, delicious meals for us and served them up with love. What a gift!

Since we’ve been back, we have enjoyed some of our favorite local restaurants including Taco Love and Arun’s Indian Kitchen. Sometimes you need a little help from your friends! Oh and speaking of friends, a special one shared some homemade sourdough bread with us and I made avocado toast and eggs for dinner one night.

The pantry challenge was a success last week and made me realize how much I take for granted. Now that we are almost completely out of produce, cheese, and milk, I’m off to the grocery store with an intentional list, grateful heart, and hopeful plan to get back into the kitchen for the rest of the week.

Thursday: veggie enchilada bake

Friday: loaded burgers, sweet potato fries, quinoa salad

Saturday: grilled steak, vegetable skewers, egyptian rice
