what’s on the menu

There’s really only one type of planning I look forward to and it’s menu planning. Turns out this is the one area most of my friends don’t like to plan so it’s been fun sharing inspiration and ideas back and forth.

A little background. I haven’t always enjoyed cooking and only knew how to put together two mediocre-at-best meals when I first got married. But over the years my love for being creative and resourceful in the kitchen has skyrocketed and menu planning keeps it soaring. Just recently my low maintenance husband became vegetarian (say what?) so that has both limited and broadened my culinary horizons.

Even though we just walked in the door from the loveliest of weekend getaways to St Augustine for my bday (more on that soon) I’m taking just a few minutes to get organized, take inventory, and make a (flexible) plan so my family of three has something nourishing to eat for dinner. This matters a lot to me, but what matters even more is the connection time at the kitchen table at the end of each day. So even if it’s a bowl of cereal or a five course meal, I plan something for dinner. Most of the time, I wing it for breakfast and lunch, but sometimes that gets added too. Sunday is church and then either lunch out or something simple and unplanned. So, without further ado … the just-got-back-in-town dinner menu!

Monday: leftover lentil soup, tempeh reuben sandwiches (first time!)

Tuesday: marry me chicken/marry me chickpeas (also first time!), rice, sautéed zucchini

Wednesday: leftovers; coffee/dessert date night

Thursday: buckwheat cakes (my husband’s favorite, peculiar only to Preston County, WV), eggs, sausage, fruit

Friday: homemade vegetable dumplings, tofu stir fry, fried rice

Saturday: … open to suggestions …
