I unashamedly enjoy going to farmer’s markets and grocery stores, cooking at all hours of the day and night, trying new recipes, and making up my own. I also thrive on being resourceful. So when a friend from church gave us some butternut squashes from their community garden I couldn’t wait to come home and roast them. Plus it’s mango season and our trees are full. So here’s what I’m dreaming of this first week of “summer” break. I love that it isn’t even officially summer yet!
Monday: buckwheat cakes; sausage; scrambled eggs; hash browns; fruit salad
Tuesday: butternut squash tacos; black beans & rice; guacamole; mango salsa
Wednesday: shepherd’s pie; truffle caesar salad; mango bread
Thursday: vegetable quiche; kale salad with mango vinaigrette
Friday: butternut squash lasagna; roasted broccoli
Saturday: grilled kebabs; corn on the cob; roasted potatoes; mango sorbet
