My stomach just started growling which reminded me I haven’t posted a weekly menu for this week. I’m trying to re-establish a rhythm on one of the busiest weeks of the year for our family.
Our one and only homeschooler is starting dual—enrollment classes tomorrow at the local college where his dad teaches! I’ve wanted this for him, but now that it’s happening, I can’t believe it. And Saturday he is taking the PSAT! He’s so chill about it all and savoring every free moment he’s got. I most certainly need a plan to 1) stay focused and 2) keep us from eating fast food all week. I even looked up a list of brain boosting foods and included as many as I could this week. Let’s gooooooo!
Monday: grilled chicken; rice and lentils; tabouleh; hummus; pita
Tuesday: breakfast tacos w/roasted veggies & avocado; citrus salad
Wednesday: pumpkin pancakes; scrambled eggs; berries
Thursday: potato and leek soup; roasted vegetable grilled cheese
Friday: lemon garlic salmon; broccoli; harvest salad w/ kale, ancient grains & roasted sweet potatoes
